VANILLA CHIA PUDDING




When life makes you feel like a diseased pigeon, fight back with badass yummy superfood pudding. Amen.





VANILLA CHIA PUDDING
with almonds and cherries


40g (1/4 cup) dates, pitted
25g (1/4 cup) almonds
175ml (3/4 cup) water
seeds from half a vanilla pod
2 tablespoons chia seeds

Place dates, almonds, water and vanilla seeds in a blender and blitz until you get a smooth, watery mixture. Put the chia seeds in a bowl and pour in the mixture, mix well and leave in the fridge for at least an hour so that the chia seeds can absorb the liquid. Just before serving, sprinkle with almonds and dried cherries if you like (or other toppings of choice). Then let the pudding party begin.
