BLACK SESAME BARS



They say necessity is the mother of invention, and perhaps fright and sadness are too; and as enormous marine mammals and horses with very short legs are just too cool to be eaten, I find myself gathering mountains of bags of roasted chickpeas and exotic snacks, as well as producing some slightly addictive all-sesame bars. That's necessity covered; and as for the other co-parents, I'm quite sure said delicious bars (and a glass of Black Death, or liquorice on toast, if worse comes to worst) will sort them two out alright.




BLACK SESAME BARS


70g (1/4 cup) black tahini
60ml (1/4 cup) agave syrup
2 tablespoons coconut oil
1 teaspoon vanilla extract
1/8 teaspoon salt
120g (3/4 cup) black sesame seeds, toasted
40g (1/4 cup) sesame seeds, toasted


Line a 15cm/6” square tin with cling film or parchment paper and set aside. Place tahini, agave syrup, coconut oil, vanilla extract and salt in a pan over low heat and heat up until completely melted. Remove from the heat and fold in the sesame seeds. Mix well and pour into the prepared tin, pressing the mixture down evenly. Cover and place in the fridge for a couple of hours or until completely solid before cutting into bars.
